Great question.
In either the hot or cold water the molecules are jiggling around. In the hot water the molecules are jiggling a little more. They're moving faster, sometimes smashing a little closer into each other, sometimes pulling a little farther apart. On average, the hot water molecules are just a little farther apart, less dense. The hot water flows a little more easily too.
