"Gelatin is relatively insoluble in cold water but hydrates readily in warm water. When added to cold water gelatin granules swell into discrete swollen particles absorbing 5-10 times their weight in water. Raising the temperature above 40 oC dissolves the swollen gelatin particles forming a solution, which gels upon cooling to the setting point."
40 Degrees Celcius, according to the site, is the minimal Gelatin protein dissolving temperature. 40 degrees celcius is 104 degrees Fahreheit.
It would be an interesting experiment to attempt yourself.
