If I sit a pan of water partially over a floor forced air heat vent, will the water evaporate to help humidify our home in winter? Thank you.

Sure, it will help.  Since you put it close to the heating vent it will evaporate a tad faster due to the increased temperature.  How much? I really don't know.  You could do an experiment (we always encourage experiments).   Put a measured amount of water in a pan and set it away from the vent for a day.   Measure how much evaporated.   Do the same with the pan close to the vent.    Let us know your results.
