Milk Burning at Bottom of Pot

Most recent answer: 07/01/2015

Q:
Is it okay for milk to burn and stick at the bottom of the utensil? This was highly unusual until I switched to a new brand. Now about half the time it gets burnt no matter how low the heat is. Does this imply anything on the quality of milk or presence/absence of any particular compounds natural/artificial ? Thanks.

A:

It's not ok for the milk to burn and stick. It's a big nuisance. That doesn't mean that there must be something wrong with the milk before it's burnt. Perhaps this milk has more of the milk sugar, lactose, in it than the other milk did. Is there no way to automatically stir it to avoid this problem?
