Hello Alicia,
No Helium --> no party balloons or scientific research at low temperature or Magnetic Resonance Imaging machines for medicine. Liquid Helium is used to cool low temperature physics experiments to a few degrees above absolute zero, an interesting regime. It is not really a necessity for human or plant life.
No Nitrogen --> no life as we know it. Nitrogen is 3% of the human body weight and is essential in the formation of proteins. Plant life could not exist without nitrogen. No proteins, no life.
