Shut off Valves for Windmills

What makes a windmill shut off after a stock tank is filled with water so it does not overflow and waste water?

The same kind valve that shuts off the water in your toilet bowl.  It's some sort of float device. There is a wide variety of models so you just have to look at the particular  installation to see what kind is used.
