if the light we see in our telescopes has taken x amount of years to reach us from distant galaxies does this mean we have no idea what our universe looks like at this very moment or only what it did look like billions of years ago

Yes, you are right. If a particular galaxy is one light year away, we will have to wait one year in order to see what is happening now.

We have a good idea of what it looks like now, because we know about how things age, but that's not the same as seeing what it is now. Mike W.
