Q:
A few days ago I cooked some grits for breakfast and had a good bit left over. Now remember I added salt to the grits. I decided to save the left overs in a small bowl. Added a little water mixed it up and placed it in my refrigerator which is set at 38 Degrees. The next morning the grits was frozen solid. ????????

The salt would make it harder for the water in the grits to freeze. Maybe the thermostat on your fridge is way off, but if so you probably would have noticed on other things. I bet the starches in the grits just dried out and formed a sort of hard plaster.
