Reducing Pressure Cooker Pressure

Q:
Why does the heat/pressure that's accumulated inside a pressure cooker dissipates when tap water is poured over pressure cooker lid after cooking? Thanks.

A:

The tap water is much cooler than the hot pot, so heat flows from the pot into the tap water. The tap water will also evaporate quickly as it's heated, taking even more heat away, like when sweat evaporates off your skin. As the water inside the pot cools, its pressure drops.
