How Evaporation Cools Liquids

Why exactly does evaporation cool water? I'm having to research it for my air condition project and I'm finding all these answers but I'm not a physicist and dot understand all the long answers given. Simply for someone without much brain power at all (such as myself) how does it cool water in a quick fire sentence if possible. Many Thanks Ash :)

Here's the two-sentence answer.

Water molecules stick to each other, so it takes energy to pull one out of the liquid. Losing that energy cools down what's left.
