how does a thermos know when to keep hot things hot and cold things cold?

I don't know if you're really a kid with a nice question or a cognitive scientist telling the oldest cognitive scientist joke in the book. Let's say it's the former.
The thermos keeps much heat from flowing, either in or out. So it keeps things at whatever temperature they start at.
